WHere is a simplified version of a cocktail featured on the seasonal cocktail list. It's a batch prepared mix that's loaded with tastes of a festive period, rendering it ideal for a festive gathering. Reserve the remaining cordial to use in morning drinks, sweets, or to mix more rounds of the drink.
The Bikini Cocktail
Serves 10 guests
To make the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Cocktail (makes 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish
Directions
To prepare the Syrup: Place every ingredients in a pan, heat until it reaches a gentle boil, stirring so the sugar melts. Next, take off the heat allowing it to cool down completely. Pour into a clean bottle, close it and refrigerate it chilled, it will last for about a month.
Preparing the Batch Mix: Pour every liquids into one large bottle, let it rest for an hour, then filter it preferably using cheesecloth, so it's completely strained.
When ready to serve: Measure 85ml of your batch mix into your cocktail shaker containing ice, and stir lightly for a minute until cold. Strain to a chilled martini glass or similar, decorate with some cranberries and finish using a light spray of the essential oil above the glass.
